Friday night in West Asheville is a lottery, and most people lose it.

You used to call at six. Nobody picked up, because at six our host was seating tables instead of holding a landline. You drove over anyway, got told two hours, and ate a gas station burrito in the car with somebody you were trying to impress. We got tired of being that restaurant. In fact, we rebuilt the entire front of house around one number: how long you stand at the door. It is nine minutes now.

The 22-minute gamble

It is 22 minutes from downtown. That is 44 minutes round trip to be told no by a host who feels just as bad about it as you do.

Nobody can answer a phone at 6pm

Between 5:30 and 8 the phone is the slowest way to reach any kitchen in this town, and voicemail is where reservations go to die. Every table on this page is held online instead.

Seven people, three separate tables

Most rooms on Haywood cap at four without notice, so a party of seven used to mean splitting up and eating a cold first course. Seven to ten now sit at one long table, four courses at $48 a head, Tuesday to Thursday.

Hold the table first. Decide what you’re eating later.

Pick a night, pick a time, give us a first name and a number. That is the whole thing. You see the real floor plan, so if 7:15 is gone it is actually gone, and it is not quietly held back for whoever tips the host. Why? Because a booking system that lies to you only works once.

No card, ever

We take no deposit and charge no no-show fee. Cancel from the confirmation text in one tap and the slot goes straight back on the board for somebody else.

Your allergy goes on the ticket

Whatever you type in the notes field prints on the kitchen ticket. You will not have to explain it three times to three different people.

A text at 3pm, not an email

A reminder the afternoon of, with the parking directions and a link to move the time if the day went sideways. The only other text you get is one two days later asking how it went.

One fire does all of it.

The building has one heat source and it is the oven. There is no induction line and no microwave, so if a dish comes out hot it went through 900 degrees of white oak first.

The oven is lit at 11am and burned down to coals by 4:30. Mains average 14 minutes from fire to table, which is why you are not waiting 40 minutes for a chicken.

Any night but Friday and Saturday it is on us. The cultured butter is the part people text their friends about.

Fourteen minutes off the oven, all plates at once. Nobody at your table sits there watching someone else eat.

Tables are two hours and if nobody is waiting, nobody rushes you. We would rather you ordered another glass of the Barbera.

Every price below is what you would actually pay. Tax and a 20% service charge are already included, so the number on the menu is the number on the check. We do not do a separate tip line.

Four courses family style off the same board, one check, 48 hours notice, Tuesday to Thursday so the kitchen can actually cook for you. Wine pairing is $26 more per person if you want it. Want a plain table for seven instead of the set menu? Tuesday to Thursday, same day is usually fine.

All 60 seats: the 33-seat room, the 11-seat bar and the 16-seat patio, and we close to the public. Menu built with you two weeks out. To date we have done 31 of these since 2023, mostly rehearsal dinners and one very good retirement party.
